Dear Class,
Ethnic Street Food Experience. See the Rubric for specific point values. Please choose a street food which is different from your own culture. Be adventurous! Explore new foods you have never experienced. Preliminary exploration— Clearly state why you chose this style of street food. How did you find this location? On-site Field Notes, a copy or photo of the receipt is required — Make observations about your entire experience. What, if anything, is interesting and different to you? (Location, type of food truck vendor, trailer, the aroma of foods, service protocol, communication, etc.) Photographs— Take relevant photos of your ethnic food experience. (food type, the decor of the truck or vendor, etc.)*Don’t forget a picture of the receipt for proof of your brief investigation Interview w/ Chef/Owner/Operator.
The questions can be for the owner, chef/cook, or the street food operation operator. Your goal is to speak with the creator of the street food concept. Of course, if the business is too busy when you visit, follow up with a phone call, a second visit, or an email. I’m not asking you 100 questions; two to three general questions should suffice. For example, you may want to ask, “How are your recipes connected to authentic Portuguese cuisine (or other)”? “What inspired you to create and serve this ethnic menu in the US”?
Final Summary— What are your thoughts on your overall learning experience? Did anything surprise you? Would you eat at this business again….try other similar places? And finally, if you were to be a street food business consultant, what would you recommend (post-observation) such as decor, location, menu, tables, umbrellas, music, and anything else you might think would benefit the street food vendor, if any?
Please create a PowerPoint 5-6 slides is plenty of your post investigative research experience, be creative with your slides, you can add videos, photos as much information about the street food business that you think is relevant to the course. Each student will have approximately 5- 10 minutes to present followed by class Q&A.
Also, please be mindful of your surroundings, and other customers, be polite, introduce yourself as a student taking this course.
Please invite the Street Food vendor to the class.
